Easy Greens with Feta
If you are ever in need of a simple, nutrient-dense side dish, greens are the way to go. Really? Greens? I can hear the “yucks” and “ewwws” through the screen! Hang on now! Give them a chance! They are quite tasty.
This recipe isn’t really a recipe because everything is to taste. All you need is a bunch or two of kale, spinach, collards, or chard. You can mix and match or put one of each if you’d like. Remember, greens cook down to nothing so it may look like a lot raw but it will be very little once it’s cooked. If using kale, pull the leaves off the thick stems. Compost the stems. They are really tough to eat. Wash the greens and spin dry in a salad spinner. You want to get as much water off as possible. Set them aside.
Chop up a few cloves of garlic and a shallot or small onion. In your saute pan, melt about one tablespoon of ghee or butter. You could use lard, bacon grease, or tallow instead if preferred. Add salt and pepper to taste. I like to add garlic powder as well. You can even add a little Herbamare seasoning. Saute the garlic and the onions.
Add the greens to the pan and turn to coat with the oil.
Let them just wilt and then add feta cheese. You can add as much or as little as you wish.
Let the feta melt slightly then plate and serve hot. Be careful with your little ones because greens can be very slippery and stringy.
