Cucumber Tomato Salad with Basil

  • 4 peeled cucumbers (chopped/cubed)
  • 4 ripe tomatoes (chopped/cubed)
  • 1-2 cloves garlic (crushed)
  • handful of fresh basil (chopped or shredded)
  • Apple cider vinegar
  • Olive oil
  • Sea salt, pepper to taste
  1. Place chopped cucumbers, tomatoes, basil and garlic in a bowl.
  2. Toss with a few splashes of oil and vinegar.
  3. Season with salt and pepper.
  4. Check for flavor and adjust as needed.
  5. Serve.
