Roasted Eggplant and Tomatoes – Guest Post at The Marathon Mom
The end of summer is always bittersweet for me. While I love the fall and everything that goes with it, I really love summer and fresh, local, in-season fruits and vegetables even more!
I enjoy making foods that celebrate summer’s bounty. Tomatoes and eggplant are still plentiful right now. My favorite way to eat eggplant and tomatoes is by roasting them with lots of garlic and parmesan cheese! It’s such a delicious dish that even the kids will eat it!
I am over at The Marathon Mom today sharing my recipe for Roasted Eggplant & Tomatoes. I know you’ll love it! Head on over there and check it out!
What’s your favorite way to eat eggplant?
